Sweet n Sour Soupserves 4-5
Instructions: 1. Cut up butternut squash: a) First cut squash in half and cut off ends b) Stand ½ squash on end and slice off skin by slicing downward c) Do the same for 2nd half of squash d) Cut open and remove seeds e) Cut squash into bite size pieces 2. Cut red bell peppers into 1” pieces 3. Add all ingredients to soup pot or crock pot and simmer until all vegetables are tender. 4. Serve soup with 1 tortilla or 1 small whole grain roll and enjoy Butternut squash is given to us in the winter time which is flu and cold season. This squash is loaded with vitamin A which can help fight off these bugs. . . nature gives us what we need when we need it, and vegetables are cheaper when they are in season too. So eat what’s in season! |
