Taco Casserole
Serves 5
Ingredients:
- 1 pound lean ground beef
- 1 16 ounce can of low fat refried beans
- 1 16 ounce jar of thick salsa
- 1 package taco seasoning
- 1 medium green bell pepper
- 1 bunch green onions
- 1 cup shredded cheese
- 1 small can sliced olives
- 1 small can chopped green chilis
- 1 cup nonfat sour cream
- 10 corn tortillas

9 easy steps:
- Cook ground beef over medium heat until cooked
- Add beans, ½ the salsa, and package seasoning to beef and stir
- Cover casserole dish with 5 corn tortillas and layer with ¾ beef mixture
- Chop onions
- Chop bell pepper
- Sprinkle onions, peppers, green chilis, olives and cheese on beef mixture
- Break 5 corn tortillas in pieces and layer on top, then top with remaining beef
- Bake for 20-30 minutes
- Top casserole and serve with remaining salsa, 2 tablespoon sour cream
Can add shredded iceberg lettuce if desired at time of serving.
